PatchMat will have a more glossy finish with a more 'embroidered' look while Patch Twill is a bit more matte with a tighter weave in the fabric. Note that PatchMat will need to be stabilized with HeatSpun while Patch Twill requires no additional stabilization before embroidery. You can reference these videos to help further.
